This fact is an essential factor for accomplishing flavor balance in dry white wines.
All the Assyrtiko grapes selected for THALASSITIS originate exclusively from vineyards in Episkopi, Akrotiri and Pyrgos regions. The vines in these regions are almost 80 years old.
The particularly low-yield that never exceeds 25 hl/ha combined with the terroir and the variety results an exuberant and nervous wine with a strong personality.
Thalassitis
Enjoy it at 10oC with seafood, fish, shellfish or even lamb stewed in lemon sauce, generally with flavors of moderate intensity, where salt, sour or oil predominate.
A special feature of most Assyrtiko wines from Santorini is that despite their white color they behave like red wines! Try to age Thalassitis for 2 to 3 years at a temperature 12ο to 14οC and you will witness a change in it. Its mineral dimension will subside while the fruity and honey aromas will expand. Don’t forget to pour Thalassitis into a wide decanter half an hour before serving. You will definitely be pleased by the result!

Assyrtiko-Santorini wines are rare and distinctive. These wines are born from the indigenous Assyrtiko grape, cultivated in some of the world’s oldest vineyards, dating back 3.500 years, on the volcanic island of Santorini, where nothing is ordinary! Assyrtiko-Santorini world class still dry whites can be drunk young or aged, as they are precious, truly ageworthy wines; the ideal complement to haute cuisine, fish, seafood and, surprisingly, even meat dishes. These terroir driven wines of distinct character are structured on exciting minerality and savorous density. They both reflect the unique volcanic and anhydrous soil of Santorini, which is an internationally acclaimed “pedigree”.
GAIA Santorini
Our winery is situated on a beach, on the east side of the island, between Kamari and Monolithos settlements. This industrial stone building used to be a tomato factory, built in the beginning of the 1900s. Here, local cherry tomatoes were made into an aromatic tomato purée until the 1970s.
With great joy we have renovated this rare, charming building, giving it new life as a winery. For GAIA, it has been an honor to preserve a piece of our heritage through reclamation of this architectural example of industrialization.
Today, the high-tech equipment and the cutting edge facilities of our winery guarantee contemporary winemaking and ideal conditions for high quality production.
